Just a small note… a lot of our food innovation work of late has explored the allure of combining savory and sweet. These guys have obviously got it nailed! (And, admittedly… they seem to be way ahead of the times as I would not have thought chocolate & meat would be a big hit.)

Actually, Toph, the Mayans thought of it first. The big difference is for Chicken Mole and other foods, the chocolate is the accent. In this case, the protein is the accent. And I just read an article in the NYT about dessert chefs fighting for center stage amidst the cooking luminaries with savory, center-of-the-plate desserts. I think Vosges is just the tip of the trend…
